Maple Pecan Rooibos Tea Recipe
Maple Pecan Rooibos tea is a soothing and warm herbal tea perfect for fall.

Total Time: ~7 minutes
Yield: 2 cups (~ 1 portions in a nice big mug!)

Kitchen Equipment
- Kettle (I love my Cuisinart electric kettle)
- Measuring cups (tsp, tbsp)
- Tea steeper or fillable tea bags
- Big Mug (~ 2 cups)
- Spoon
Ingredients
Makes 1 nice large mug (~2 cups)
- 2 cups boiling water
- 2 gr (2 tsp) loose rooibos tea (or 1 Rooibos tea bag)
- 1/2 tsp to 1 tsp maple syrup (to taste for more or less sweetness)
- 1 tbsp chopped roasted pecans

- Boil 2 cup of water.
- Measure 2 gr (2 tsp) loose rooibos tea and 1 tbsp chopped pecans. Add them to a tea steeper or a fillable tea bag.
- Once the water is boiled, pour it over your tea let steep for 4-5 minutes (or per directions for your rooibos tea).
- Once the tea is steeped, remove the tea bag or steeper. Stir in 1 tsp maple syrup.
- Enjoy!

What is Rooibos Tea?
Rooibos tea is an herbal tea from the Aspalathus plant. It’s native to South Africa and has been consumed for centuries due to its myriad of health benefits. It’s also called red tea or red bush tea (from the colour of the bush and the colour of the steeped tea!).
It has a caramel vanilla tasting notes (p.s. do your own tea tasting with my guide!). This herbal tea is caffeine free and the perfect black tea replacement.
The Pecans: Roasted vs. Raw, Why Chop?
You can use raw pecans, but there will be more flavour in roasted pecans. Roasting pecans bring out the sweetness and butteriness of the nut. Plus they’ll also be easier to chop once roasted!
Chopping the pecans gives you more surface area for the flavour to steep in the water.

How to Roast Your Own Pecans
I buy raw pecans and roast them myself at home, it’s very easy to do and takes under 15 minutes.
- Preheat oven to 350°
- Place tinfoil on a baking sheet, add pecans in a single layer.
- Once the oven is preheated, put in pecans for 5 minutes.
- After 5 minutes, stir the pecans around and put them back in the oven for another 3 minutes.
- Repeat the process in 3 minute intervals until your desired roast level is reached. I like them after 8 to 11 minutes (putting them in for one to two three minute rounds), but it will depend on your oven and roast preferences.

What Maple Syrup To Use
I’m from Quebec, so I might be a little biased here, but for the best tasting tea you’ll want tot use 100% real maple syrup (nothing made from cane sugar or artificial sweeteners).
Costco makes a good 100% maple syrup from their Kirkland brand (at least they do in Canada!). Just be sure to read the ingredients when picking up a maple syrup, it shouldn’t include anything else, like this Grade A maple syrup from 365 Whole Foods! The only ingredient is pure organic maple syrup.
Optional Add-On: Cinnamon
If it’s a little too sweet for your taste, I really like adding cinnamon as a sprinkle on top to balance out the flavours (and really add more autumn flavours to this fall tea recipe!).
I personally am not a big fan of cinnamon, but have recently discovered Ceylon Cinnamon which is more subtle, and less spicy in flavour. Plus it actually has more health benefits than Cassia cinnamon, which is much more commonly used in North America.
